Last year I wrote about my love/hate relationship with green smoothies. Since then I’ve tried lots of different fruit and veggie combinations … and you know what, it’s not so bad. In fact, I’ve grown to enjoy them.
This is why I was actually excited when Max (Max’s Best Bootcamp) asked for a smoothie recipe for our latest Recipe of the Week. In our latest collaboration we bring together fruit and a hint of veggie for a simple smoothie.
If you’re like I was and not into “green smoothies,” don’t worry. This recipe is really more on the fruit side. Consider it a gateway to the world of using greens in a smoothie.
I chose blueberries as the fruit since they are low in sugar and in season right now (which means they are delicious). I added just a little bit of spinach for some great nutrition that wouldn’t overpower the fruit flavor. Think of it as a good way to “sneak in” another serving of veggies into your routine.
Blueberry Spinach Smoothie
Serves 2
Ingredients
- 1 banana
- 2 cups blueberries (fresh or frozen)
- 1 cup spinach leaves
- 1/2 cup greek yogurt (or coconut yogurt)
- ½ cup coconut water (or water, milk)
- 1 tsp. vanilla
Directions
- Place all ingredients into the blender.
- Blend until smooth.
- Serve immediately.
This is another recipe that you can think of as a foundation for other fruit/veggie combinations. Swap in other kinds of berries or do a combination. And, as you get into using greens in your smoothies you can work from subtle-tasting spinach up to hearty kale.
And as always be sure to check out Max’s Best Bootcamp TV for great health and fitness inspiration.
I usually enjoy those things in solid form… But what a great way to get a lot of fruits and vegetables in one shot! I might sit down and eat a cup of baby spinach leaves in a salad or something, but not a cup of blueberries.
I do in fact hate mornings, so I find this is a good way get more good stuff into my morning routine without too much effort.
