Much to my delight, the husband volunteered to make dinner the other night: Whole wheat rigatoni with local broccoli and chorizo. He sauteed onion and garlic in some olive oil, then added sliced chorizo. Once the chorizo slices looked crispy around the edges he de-glazed the pan with balsamic vinegar. He let that reduce a bit, then tossed in the broccoli florets, covered the pan and let it cook. In the meantime he cooked the pasta. Once the pasta was done, he added it to broccoli and chorizo, added a touch more olive oil and some hot red pepper flakes. He mixed that all around and plated it up with a touch of grated Pecorino Romano cheese on top. It was delicious … a girl sure could get used to this.
