Wow, this past weekend it felt like we skipped Spring and went straight to Summer. It was perfect for getting outside. Saturday we were busy putting in our vegetable garden and were pretty much wiped out by the end of the day. So, we decided to keep dinner easy and light.
First course: Steamed fiddleheads (Holbrook Farm) with a horseradish mayo. The recipe was based on one I found in my Epicurious iPhone App.
Third course: grilled lamb chops (not local, but organic, grass-fed from Rocky Mountain Organic). With quality meat you don’t need to do much. We just sprinkled on a little garlic salt and pepper. Delicious! I must admit I am a sucker for the crispy fat on lamb chops and these were perfect thanks to my grill-master husband.
It was a perfect day finished with a perfect meal that was easy, light & fresh.

I have read some rave reviews of this app called Ratio. It's not a freebie, but I think it might be worth getting.
