Photo Worthy Dinner

When you look through our iPhoto library one thing is clear – we take a lot of photos of our food! So, I thought what better way to highlight Meatless Monday than with photos from last week’s meal. There’s not much to say … except … YUM!

Grilled local corn! Basically, I pulled out as much of the silks as I could along with a few pieces of the husk. I soaked the ears in water for about 10 minutes and then threw them on the grill for 15 minutes, turning every 5 minutes or so. Then, very carefully, pulled off the husk and placed the ears back on the grill, for just a couple of minutes, to char some of the kernels.

For the rest of the meal: I sauteed some minced garlic cloves and jalapeno in olive oil, then threw in a couple cups of cooked black beans and a touch of their soaking liquid. Simmered it all down and placed it on warmed corn tortillas with a little cheese. For a special touch I also made a quick salsa verde: 6 small tomatillos, 1/4 of a yellow onion, 1 jalapeno, two pinches of cilantro and some fresh lemon and lime juice. The fresh veggies were all local.
