As you know last week in conjunction with National Farmer’s Market Week was the CT Grown Challenge. In my opinion the “challenge” was a great way to celebrate local food and local farmers.
Needless to say I “scored” big time at the Danbury Farmer’s Market: Corn, Tomatillos, Eggplant, Zucchini, Yellow Squash, Tomatoes, Green Beans, Jalapenos … and the crowning jewel Fresh Figs!
That evening we made kebabs with the zucchini, squash, and a few jalapenos. We just sprinkled on some olive oil, salt, and pepper and grilled them up. In addition, we used some fresh baby Swiss chard from our garden for a side salad with a basic balsamic vinaigrette. To finish things off, I halved the fresh figs and placed them cut-side down on the grill just until the sugars started to caramelize. I plated them up with some local honey drizzled on top and a sprinkle of sliced almonds.
This was just one meal from last week in honor of the CT Grown Challenge; but, to me, it wasn’t a challenge at all. It was a summer dinner at its best! With the difficult weather our farmers faced this season I am especially grateful for every bite!
