I love when the abundance of summer starts coming alive at the farmers’ market. I always buy more than I could possible eat in a week, but I just can’t help myself. This past weekend was no different. So, as a send off dinner for my husband who was embarking on a two week business trip (no doubt one filled with foods of convenience) I decided to make a simple dinner full of healthy and local flavors.
On the menu:
Grilled hot Italian sausage patties (Eagle Wood Farms)
Grilled zucchini (Wild Carrot Farm)
Fresh tomato sauce: tomatoes (Gresczyk Farms), basil (March Farm), chives (Newgate Farms), garlic scapes (Wild Carrot Farm), extra virgin olive oil and red wine vinegar (Olive Oil Factory). I just tossed all the ingredients into the food processor, pulsed a few times, and ta-da the perfect topping for the sausage patties.
Microgreens (Keed’s Farm) salad with a red wine vinaigrette.
Ah, summer. Dining al fresco on simple, delicious, local flavors. Life is good.
