Simplicity. That was the goal of this local meal. Everything came from the New Milford Farmers’ Market. We had pork chops from Ox Hollow Farm, snap peas and beets from Riverbank Farm, garlic scapes from Mountain View Farm, and radishes (can’t recall which vendor).
We just lightly seasoned the pork chops with salt and pepper, then threw them on the grill. Right before serving I topped them with a little of my garlic scape dressing. I also made a raw beet and radish salad (recipe coming soon). We eat the snap peas raw without any dressing or seasoning. Seriously, those snap peas didn’t need a thing. There is nothing sweeter and crisper than fresh snap peas.
In the end, when you have truly fresh, in-season ingredients you don’t need to do much to make a delicious meal.
