Come the cooler days of September I always begin to wax poetic about all the amazing local produce I enjoyed over the summer. Then this morning I read a fun blog post about beets. As the writer pointed out, they are a perfect ingredient for those of us trying to eat locally. They are one of the first things available at the start of the season and they are one of the last to bid farewell. Plus, they can last forever – well at least for a long time like through winter – as long as they’re stored properly. You can do so much with beets: pickle, roast, juice, steam, or just grate raw on a salad. So, as the farmers markets begin to wind down let’s all remember to pick up some beets.
